Chicken with saffron and cinnamon

This delicious saffron chicken flavoured with a vanilla pod and accompanied by baked vegetables gives off some Christmas aromas. try also this chocolate cake without flour recipe too.

2 chickens

1 sachet of saffron

1 teaspoon poultry spice mix

3 tablespoons of peanut oil

4 cinnamon sticks

2 oranges

400 g of orange and yellow carrots

2 red peppers

2 raw coloured beets

Heat the oven to 170 ° C. Mix the saffron and the spice mixture with a little oil and brush it on the chickens. Insert half a cinnamon stick into the ventral cavity of each chicken and place them on a baking sheet. Cut the oranges in quarters. Clean carrots, peppers and beets, then cut them into large pieces. Mix with the leftover oil and distribute everything around the chickens. Combine the remaining cinnamon sticks. Bake in the centre of the oven for 50-60 minutes. Useful tips

To enjoy the chickens as an appetizer, divide them into small pieces and arrange them on a tray on a buffet so that the guests are served the meat and vegetables. Two chickens are enough for approx. 10 people.
